So apparently, my "Pause Break" Key has been having issues (probably the microswitch) and while I play, I constantly get the "Log out" Dialogue to pop up. Long story short, Instead of trying to buy a new keyboard over one broken key, Is there anyway to remap this key so its not the "Log out" key? This is becoming super frustrating. Making the game almost unplayable at times.

Not that I know of. Only rebinds in ffxi is the choice between full / compact1 / compact2 layouts, but pause-break stays the same afaik.

You can rebind keys at Misc 2 under "Key assignments" afaik. But not everyey is there I think. This probably won't help you but maybe check that one out
edit: Maybe what you can try is bind a useless (if there is something like that) command to the key that you have problems with. In ashita go to the Scripts folder and then go to Default.txt.
There you can see there are already a few eys bound to certain commands. Maybe try fiddlng around there and see if anything helps/works
