I saw this problem mentioned further down and i'd hoped there was a solution in there... but there was not!

I followed the install guide step by step and nothing i do will have it find FFXI in file check on POL. I've resorted to uninstalling, re-downloading and trying again from scratch.

I'm running Windows 10 OS for anyone wondering. Is this a common issue or am I missing something during following the install guide?

You didn't copy the update files into the ffxi directory correctly. That's what enables the ffxi in the dropdown. If you do it right, it should prompt you to overwrite a bunch of stuff.

It prompted the overwrite when I copied them over but i still couldn't get FFXI to appear. I'm re-installing as we speak, hopefully I won't run into any issues and I just did something wrong the first time around.

Seems to have fixed itself, i likely didn't copy the update files correctly as you mentioned. Thanks for the help!
