tldr
Sword, parry, and shield are good. Enmity's good. Spell interrupt's situationally good if you can supplement it with 5/5 iron will (if it even works, I haven't tested) and knightly earring/valor legs. HP's good til it gets expensive.
I am not a 75 PLD but I agree with Entry. Weapons always a first for melee type jobs. Shield for sure.
In addition, I recommend STR last since it's a pain to max out and it's better to keep this for last in my opinion (and other 75's opinion too).
