So I've just installed this game/server and when I try to play on the 1920x1080 setting the top portion and bottom portion of the screen is cut off. I can't access any of the menus on the bottom. When creating a character the first 2 options were cut off so it was inaccessible by mouse. Is there a way to adjust it so everything just fits on my screen?

That's because the default is actually 1920x1200. If you edit the profile to do 1920x1080, it will work.
