Is there anyway to make or fix my HUD? It's so small it's hard for me to see it.

I would suggest that you do the following:

-Right-click your desktop background, change the resolution to 1280 x 720. (I only change my resolution for this game, then I change it back when I'm done.)
-Create a new Nasomi Profile that matches the 1280 x 720 resolution.

There are lots of steps to make each of those happen, let me know if you need help.

You can't move any of the elements around in the game. The one thing you have control over is the chat box. Somewhere in the settings you can change its size and also add a second one if desired.

Instead of changing your desktop resolution every time you play try editing one of the ashita configs and go in to window and under resolutions theres an option for menu resolutions which should change the size, i have mine matched at my window resolution of 1920 x 1080 and its perfectly sized.
