So I got through installation successfully, account creation, and start up, but when I get to the game, it does not fit on screen. It acts as if monitor is larger than it actually is. (It's 1366x768) I have tried all three settings for resolution, but the game doesn't scale to my screen correctly, making it so I can't even see the character creation options. Anyone lend me a hand on this?

If you're using windows 10, it's doing screen scaling. You'll have to disable it. Otherwise, check your screen preferences in the ashita profile you're using and make sure they match what your actual monitor resolution is.
