I'm looking for simple, yet flavorful, ways to increase the amount of vegetables in my diet. On the weekdays, I eat a bit of broccoli and brussels sprouts steamed in this little cooker/skillet type thing for vitamin K and C, and brussels sprouts really help my inflammation (anecdote). I also have a small salad at work everyday for vitamin A (I make sure to get the leafy green lettuce, not trash iceberg lettuce!).

Are there any holes anyone can find or some good recommendations for tasty, nutrient-rich, vegetables? One really can't eat enough of them.

I should mention that I don't consume dairy products; no milk, cheese, yogurt, butter, etc.

No tomatoes either, or similar species.

I would like to recommend my smoothie that i make.
i eyeball everything so unfortunately i don't have precise measurements.

handful of frozen blueberrys
handful of kale (i'll usually take a large leaf, wash it, then fold it over a few times and break it into halves)
handful of spinach
1 banana OR 1 avacado
(here i add a cup of yogurt sometimes but you can omit this)
about 10oz,give or take, of almond milk

blend all of that to desired consistency and enjoy a delicious and nutrient rich meal :)

Hey Cilarnen,

I would swap out lettuce entirely in your salads for vitamin rich leaves like spinach, kale, and arugula.

Saiga's post about smoothies is also a fantastic way to do it. You can completely hide the taste of the spinach and kale with the right amount of banana and blueberry! On top of this, I tend to use water as a base for smoothies like this. It really doesn't affect the flavor at all. You would just want to make sure as the both the banana and blueberries are pre-frozen and you use some ice to get the smoothie to a thicker consistency.

Thanks for the replies. Unfortunately, smoothies are out of the picture at the moment because they're noisy. I don't want to wake people up in the morning when I get done with work at 6am. I will have to give it a try on the weekends when I'm not at home.

Kale tastes like ass. I like spinach, I'm just way too lazy to prepare it. The leafy green lettuce I use, while not the best, is still really good as far as lettuce goes for nutrients.

Add spinach to every meal. With eggs and cheese. In your salads. As a side for dinner.

I grow and sell sprouts and microgreens. They are easy to grow and even easier to eat/cook with. Check into getting some seeds and growing in jars or hemp sprouting bags. Broccoli sprouts are the fad now. Fenugreek sprouts can be quickly tossed in a crock pot with veggies and beans to give it a curry-like spice. They all have their own unique peculiarities.

A little chopped up bokchoy in my morning eggs has also been a delight recently, if you are open to cabbage-y flavors.

You mentioned inflammation... Turmeric is a natural anti-inflammatory as well.

Edit: Only use untreated seeds. They put chemical coatings on a lot of seeds.
