Undercutting, that's exactly what is happening. People put items up for say 49,900 gil, and you put yours up for 50,000 gil. Because of the way the AH works, instead of first item put up, first item sold, it's the cheaper that sells first. So the item that is put up for 49,900 will sell for first because it's set at a lower price, even if the person pays 50k for it. It's also how the market in the game works so well, or badly, depending on how you look at it.
