I had the same issue at first too. You have to go in and manually separate them and trade them as 7 single eggs.

Turn off inventory auto sorting in Config -> Gameplay -> Inventory Sort [Off], and then un-stack the eggs until they are all in stacks of just 1. Trade him all 7 in that manner (individual stacks) so that 7 out of 8 of the trading window slots are full, and you'll get your Moogle Cap.
