Those things made it easier sure, certainly wasn't make or break though. In fact, with the exception of composure and, as Deadwing said prior, some WoTg equips, I didn't have anything like that as I was playing on the Xbox 360, at the time.
Again though, in the face of two good RDM/NIN with the criticals (in this case, af2 body/head, af1 head/Dalm/haste/pdt/fire resist/etc) the aforementioned wouldn't have been the difference of defeat. Two good RDM/NIN can hold near enough anything all day regardless, you claim to have played RDM/NIN so you shouldn't find that prospect unbelievable. So it
shouldn't be unbelievable that two RDM could whittle down something that doesn't rage eventually--though to be fair, Cerberus has a slight regen if I remember so I wouldn't try it without at least one Excalibur, you would seriously be there for days slapping it with Joyeuse, or something.
Regarding era changes, there are some major differences, and none of which
truly devalue this Cerberus duo, because the differences primarily pertain to elemental magic (they cast a lot faster, cheaper, and deal more damage) but you still can not feasibly 'nuke' Cerberus at Lv.75, so this was moot. Another one is many weaponskills received a huge ftp boost, which again is pretty moot--Deadwing was the only one melee'ing to any serious effect, and was never able to obtain 1000TP before swapping Excalibur out for other weapons. And that is basically that, enemies weren't weaker, they didn't attack slower or deal less damage--at the point of this video the only major adjustment was elemental magic and weaponskills as they reworked it a lot for the point that relevant retail content was at. The biggest thing you can argue for is composure but honestly, when there is two of you it's merely a convenience rather than a necessity.
As for our level, no clear cut way to make you believe we were Lv.75, what I can say though, is our HP/MP pools are pretty damn reminiscent of Lv.75, in addition, if we were Lv.80 or above, Slow and Poison wouldn't have been
near as difficult as they were to land--not to mention Ululation would have been resisted frequently. Ultimately and as said aforementioned, if you played RDM in the capacity you say you did, this should not be an unbelievable feat. Frankly, I was more impressed we managed to sit through it all rather than the kill itself---Cerberus' stopping power is quite light with two.
